Chicken Cornbread Casserole

Ingredients: 

  • 1 Can Condensed Cream of Chicken Soup
  • 1 Can Condensed Cream of Mushroom Soup 
  • 3/4 Cup Milk 
  • Meat from 1 Rotisserie Chicken, into bitesize pieces 
  • Optional Vegetables; 1 Cup of Frozen Peas & Carrots
  • 1 Cup Grated Cheddar Cheese 
  • 1 Package of 7.75 Oz Original Marie Calendars Corn Bread Mix
  • 1 Can Creamed Corn 
  • 1/3 Cup Sour Cream 
  • 1 Egg
  • 2 Tablespoons Melted Butter 

Directions: 

  1. Preheat Oven to 400
  2. Grease a 3 quart baking dish 
  3. In a bowl whisk the soups and milk, until combined 
  4. Stir chicken and cheese (and optional vegetables), into the soup and milk mixture 
  5. Pour the chicken mixture into the baking dish 
  6. In a separate bowl mix together; corn bread mix, creamed corn, sour cream, egg, and melted butter. 
  7. Spread the corn bread mixture over the top of the chicken mixture. 
  8. Bake for 45 minutes
