Strawberry Shortcake Scones

Ingredients:
1 pouch Sticky Fingers Strawberry Scone Mix
2-3 cups sliced strawberries
1 cup heavy whipping cream
2 tablespoons granulated sugar
Powdered sugar for garnish

 
Directions:

  1. Prepare 1 pouch of Sticky Fingers Strawberry Scone Mix as directed, but drop 8 scones onto prepared pan. Bake for 17-20 minutes, or until golden brown and firm to the touch. Cool completely on pan. Slice cooled scones in half horizontally.
  2. Whip heavy cream and granulated sugar together on high speed until medium peaks form, about 3-5 minutes.
  3. Place sliced strawberries on bottom half of scone. Spoon whipped cream over strawberries, then top with remaining half of scone. Sift powdered sugar over scone, if desired. For a more elegant look, pipe whipped cream using a large star tip.
