Zucchini Pancake

Zucchini Pancake

Ingredients:

  • 2 Cups + 4 Tablespoons of Sticky Fingers Buttermilk Pancake Mix 
  • 1 Large Zucchini, grated 
  • 1 Large Egg, lightly beaten
  • 1/2 Cup Buttermilk or Milk (might need to be adjusted)

Directions: 

  1. Heat a pan to medium heat, and grease pan with butter or oil 
  2. Combine all the ingredients, except the milk. 
  3. Add the milk slowly until desired texture is achieved. You might need more or less milk because of the water content of the zucchini. 
  4. Spoon 1/4 cup of the batter onto the prepared pan, and cook on each side about 3-5 minutes. 
  5. Serve warm with sour cream or Greek yogurt based dipping sauces
